paleo spaghetti = bison meatballs with spaghetti squash

spaghetti squash is such an easy thing to make when you “cheat”. i know that you’re supposed to put it in the oven for a long time but i use the microwave, my secret weapon!

ingredients:

  • spaghetti squash
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1 lb ground bison
  • 1/2 diced onion
  • 2 tbs almond flour
  • 2 tbs coconut oil
  • sea salt
  • oregano

prepare the spaghetti squash.

directions for bison meatballs:

  1. preheat oven to 375 degrees
  2. mix ground bison, onion, almond flour, coconut oil, and sea salt
  3. line and grease a baking pan with coconut oil
  4. make “balls” out of meat mixture and place on the baking pan
  5. bake for 30 mins

directions for marinara sauce:

  1. in a saucepan, heat diced tomatoes and tomato paste
  2. continuously mix until it’s at a desired consistency
  3. mix in oregano
  4. add cooked meatballs
  5. mix

…then add meatball and meat sauce on top of the spaghetti squash
