paleo pulled pork

i really wanted to use the crockpot today so i looked through my Pinterest pins to find something with the least amount of ingredients and chose paleo pulled pork!!! tom would always talk about how San Diego doesn’t know how to do bbq so i wanted to make good pulled pork.  it may not taste like the “real bbq” but at least it was delicious!

ingredients: 

  • 3 – 5 lb pork booty
  • 2 cups of bbq sauce — i cheated and used store-bought bbq sauce (with no added sugar) so it’s not 100% paleo.
    • if you want to be 100% paleo, paleo recipes can be found on: thedomesticman.com or paleodietlifestyle.com or any other paleo website. WARNING: making homeade paleo condiments take a long time..so most of the time i don’t think it’s worth it.
  • 1 red onion
  • 1 clove of garlic
  • 4 leaves of collard greens
  • bbq sauce

directions:

  1. cut red onion in 1/2 inch pieces
  2. peel garlic
  3. stick a narrow knife into the pork deep enough to stuff a clove of garlic in there — repeat until you insert all cloves from one whole head of garlic
  4. place pork booty in crockpot and spread bbq sauce all over the meat
  5. pour bbq sauce into the crockpot until you have about 1/4 cup of bbq sauce left
  6. spread onion on and around the pork butt butt
  7. place collard greens over the meat and sauce so that you only see green
  8. turn crockpot on — high for 6 hours. make sure the meat is tender and will be easily pulled
  9. place cooked meat in a large bowl
  10. use two forks and pull away
  11. add the remaining bbq sauce
  12. devour this delicious meat!…..with lettuce, with sweet potato…whatever your heart desires. 🙂
